Pasta with Creamy Pumpkin Sauce

With the first glimpse of those little pie pumpkins at the farmer’s market, my mind starts prepping those little pumpkins for this recipe.

This is my one of my very favorite fall comfort dishes. The sauce has a very delicate flavor and is unlike any other sauce I’ve ever used on pasta. I guess it would come closest to resembling an Alfredo sauce, although I’ve never been able to eat more than about two bites of Alfredo sauce without feeling comatose due to it’s overpowering richness. Not so with this healthy pumpkin sauce! The creamy richness comes from nutrient dense…

Overcoming dietary anxiety and creating a “label-free” diet you love

“To eat is a necessity, but to eat intelligently is an art.” –LA ROCHEFOUCAULD

We’re living in a world of dietary anxiety. No doubt about it.

It includes countless dietary theories, diets with labels, conflicting nutrition advice, food politics and even food fraud (a topic for another day!). The field of nutrition is constantly evolving and we’re bombarded daily with a seemingly endless stream of contradictory information and trendy diets. It can be overwhelming and there’s so much confusion out there.

Designing a personal diet that truly suits your life takes time, persistence and maybe some guidance. But the good news is…

2-Ingredient Soft Serve Nice Cream

Oh sweet summer 🙂  How I love me some ice cream. But since I eat pretty much dairy and gluten free, I have to improvise, because I don’t believe in deprivation!

But this is no sacrifice and honestly, it doesn’t get much easier than this to make a simple, healthy, dairy free and naturally sweet soft serve! And bonus, no ice cream maker needed! This is super easy to make with either a high-speed blender or a food processor, and obviously the ingredient list is quite manageable. Just keep storing up those frozen bananas, they’re gonna go fast!

Tips for the Healthiest Holidays

Take a minute to step aside from the holiday swirl of your life right now.

Read this blog post as a reminder to slow down and carve out some time and space to truly nourish yourself this holiday season. At this time of year more than ever, we tend to abandon our own self care and goals, in the name of getting it all done, perfectionism and even holiday cheer. But we can easily find ourselves losing touch, running out of steam and not supporting ourselves nutritionally or spiritually. There is a certain kind of balance that needs to happen…

Dairy Free Kale Caesar Salad

Ah, the ever popular Caesar salad. Always a favorite due to it’s creamy, garlicky, parmesan cheesy, bread crumb-y calorie dense goodness. So tasty, but not exactly the healthiest choice as far as salads go, and forget it if you’re ditching the gluten, dairy or have an egg allergy! Unlike a traditional Caesar, which can quickly weigh you down and trigger inflammation, this Caesar salad is perfect for cleansing the body, boosting vitality and also happens to be delicious!

I love creating healthier versions of traditional favorites that I know will fuel my body in all the good ways. This recipe…

Raw Cauliflower “Detox” Tabbouleh

This delicious take on a Middle Eastern tabbouleh salad is raw, vegan, grain-free, and full of nutrients! Bursting with fresh flavors, these super-food ingredients also support detoxification, an alkaline environment in the body, keep your blood sugar stable, decrease inflammation, and heal your gut! Traditional tabbouleh uses bulgur wheat, but I’m replacing that here with cauliflower. Because…more vegetables!

And did I mention, cauliflower prepared this way also happens to taste amazing? Years ago, amazing and cauliflower would not have made it into the same sentence, if I was writing it, but I’ve come to fall in love with cauliflower, it’s…

Vietnamese Zucchini Noodle Salad

How much do I love the flavors of Southeast Asia? To put it eloquently…so much. Really a lot.

❤❤❤❤❤This much❤❤❤❤❤

Vietnamese, Thai, and Cambodian are my faves and they’re all slightly different in their flavor profile, but all equally delicious. I cook recipes inspired from this part of the world a lot, because they are full of fresh veggies and it’s really easy to throw together something clean, healthy and delicious. The inspiration for this recipe came from a traditional rice noodle salad, but I wanted to try a combo green and noodle salad so I swapped out the rice noodles for…

When you need a side for a friend’s cookout…

This one is always a crowd pleaser, easy to throw together and adapt to your particular tastes. It’s a good go-to recipe for a summer side. Plus…corn, basil, tomato, avocado! It’s such a delicious way to throw together summer’s bounty, especially here in Indiana, where there is rarely a shortage of corn! You really can combine any garden veggies or herbs here to use what you have and prefer. Use the corn as a base and go from there. The simple dressing will work for any combo!

Enjoy!
