This delicious take on a Middle Eastern tabbouleh salad is raw, vegan, grain-free, and full of nutrients! Bursting with fresh flavors, these super-food ingredients also support detoxification, an alkaline environment in the body, keep your blood sugar stable, decrease inflammation, and heal your gut! Traditional tabbouleh uses bulgur wheat, but I’m replacing that here with cauliflower. Because…more vegetables!
And did I mention, cauliflower prepared this way also happens to taste amazing? Years ago, amazing and cauliflower would not have made it into the same sentence, if I was writing it, but I’ve come to fall in love with cauliflower, it’s incredible health benefits and it’s versatility. This salad is also a great vehicle for mouthfuls of tasty and cleansing herbs to enter your body!
Cauliflower itself it a great veggie for detox, but the addition of daikon radish (a secret weapon for detox!) boosts the cleansing properties of this salad even more.
If you haven’t yet tried cauliflower rice, this preparation is a staple of the grain-free diet, but you don’t have to be grain free to enjoy it! Subbing cauliflower for grains can simply be a great way to boost your veggie intake and nutrition (plus all of the benefits mentioned above!).
I use a food processor to make my “rice”, but if you don’t have one, you can also use a box grater to “grate” the cauliflower into rice. Many stores also sell “riced” cauliflower so you can easily skip this step, using a prepared option.
Don’t forget to remove the seeds and inner “flesh” of the tomato, as well as the seeds from the cucumber, It will keep the salad from getting too watery.

Raw Cauliflower “Detox” Tabbouleh
Serves 6
Ingredients:
1 medium head cauliflower, cored and chopped into florets
1 daikon radish, roughly chopped (optional)
3 cups parsley, finely chopped
2 cups tomatoes, flesh and seeds removed, finely chopped
1 English cucumber, unpeeled, seeded and finely chopped
1 bunch scallions, thinly sliced
2 cloves garlic, minced
¼ cup extra virgin olive oil
¼ cup fresh lemon juice (about 2 lemons)
2 teaspoons sea salt
1 teaspoon fresh ground black pepper
Directions:
In a food processor, add cauliflower florets and chopped daikon radish. Pulse until you have a rice-like texture. (You may need to do this in batches to avoid over-crowding your food processor.)
Add the riced cauliflower and daikon radish to a large bowl. Add all other remaining ingredients and mix well.
Add more lemon or seasoning to taste.
