Pumpkin Almond Flour Bread (Gluten Free, Dairy Free, Paleo)

Hello pumpkin season! In honor of fall and all things pumpkin, here is an adaptation of one of my absolute favorite recipes, Lemon Almond Flour Bread. I make that bread SO much and can’t believe I haven’t tried adapting it before. I may even like this version better- at least this time of year. The pumpkin puree makes this bread incredibly moist and it’s perfectly spiced with pumpkin spice of course! This will become your go-to fall favorite breakfast or snack. It’s perfect to serve at the holidays too!

This bread…

Easy Homemade Granola (Sugar Free)

What are you munching on while home all day during quarantine? I’m trying to stick to my regular eating schedule, but that has always and probably always will include snacks 😊 This is my go-to quick, easy homemade granola recipe and I’m trying to keep a big batch of it around for when I need something slightly sweet and crunchy! It’s the perfect snack with fruit or yogurt and of course as a nutritious homemade breakfast cereal.

Store bought granola is typically full of sugar and honestly at this point it’s much more…

Lemon Almond Flour Bread (Gluten Free)

I am obsessed with lemons. Even before I began studying nutrition and learning about the amazing benefits of lemons, I’ve loved them. They are such a happy food! I even have a lemon tree, that is thriving, in Indiana! Indiana is known for corn not citrus, but thanks to a sun filled patio in the warm months, a 4-season sunroom for the cold months + some heat lamps, we’ve managed to keep this lemon tree alive for 6 years! I discovered that lemon trees are very charming patio decor while traveling in Italy years ago, where lemons…

Healthy 2 Ingredient Pancakes (Paleo, Whole 30, Grain-free, Gluten-free, Dairy-free)

It’s no secret. Pancakes are not a health food. But they do tend to be a weekend staple for many and really, who doesn’t love pancakes for breakfast (or maybe even brinner)! I love them too but am going to take a pass on the fluffy, empty carb, processed flour version these days. Traditional pancakes may taste delicious, but it’s like a glycemic bomb goes off right there at the breakfast table, and your body takes the hit. Spiking your blood sugar with processed flour and sugar is not a good idea first thing in the morning….

Coconut Chia Pudding with Berry Compote

Chia pudding. You love it or you hate it. Or you just haven’t tried this recipe yet!! Seriously, if you think you’re not a fan of chia, this might change your mind! It’s not your run of the mill, bland chia pudding, because who would want to eat that?

I personally love chia pudding for a quick, easy, make-ahead breakfast, and of course, the health benefits. And this is my very favorite version, maybe because it tastes like dessert!

It’s very rich, but not overly sweet, due to the full-fat coconut milk and very berry compote, which is bursting with natural…

Vanilla-Maple Oat Bran with Almonds & Dates

If you grew up eating Cream of Wheat (and liked it, like I did!), but don’t do gluten anymore you’re going to love oat bran! It totally reminds me of Cream of Wheat, in both texture and taste and this is my go-to when I want a warm breakfast bowl to nourish my body and kick off my day.

Unlike most grain-based breakfasts which can contribute to inflammation and spike blood sugar, oat bran has a blood sugar stabilizing effect to keep you off the blood sugar roller-coaster ride that can wreak havoc with your energy, moods, hormones and just…

Grain Free Cereal

I grew up on cereal. Who didn’t? But in the interest of my health, I’ve given up on the processed stuff. Luckily, it’s easy to replace with a “cereal” made from protein and nutrient rich nuts and seeds and naturally sweetened with coconut, vanilla and cinnamon. I like to top with fresh berries as well! Enjoy!

Grain Free Cereal

Serves 1

Ingredients

2 tablespoons sunflower seeds

2 tablespoons pumpkin seeds

2 tablespoons raw almonds

1 tablespoon ground flax

1 tablespoon hemp seed

2 tablespoons shredded coconut

½ teaspoon vanilla

½ teaspoon cinnamon

½ cup berries (optional)

almond milk (for serving)

Add nuts, seeds, coconut…

Strawberry Basil-Lime Smoothie

Ooh, does this just taste like summer!

Here’s a heads up though. There is a reason I took a photo BEFORE I blended it all up and it’s not just to be all artsy. This smoothie contains 2 different color foods, green and red. And if you remember your days in elementary art studying the color wheel, green + red = brown. Not pretty for a smoothie, but unfortunately how many of them turn out! So let the “before” picture inspire you to make this one, because the “before” picture is a whole lot more appetizing and actually resembles what…

Cashew Cream Protein Smoothie

Oh my. I want to tell you to just get in your car. Head to the store. Buy the ingredients for this smoothie. And make it. Now.

It is that good!

Not only is it delicious, but it nourishes and satisfies in the way that only a dessert-like “milk-shaky” protein smoothie can do. Because it’s got a good combo of protein, fat and natural sweetness, it will fill you up, satisfy sugar cravings and give you tons of energy to power through your day!

Cashews are one of the best ways to add creamy richness to many recipes, and work incredibly well in…

It’s got some powerhouse ingredients, so it can definitely qualify for breakfast. Plus, you’re beginning your day with a boost for both your metabolism and energy! I’ve got you covered in the protein department…
